Harvesting Snow Apples and How to Preserve Apples Under the Snow, Japanese Apple Growing Techniques

The Japanese technique of cultivating snow apples, harvesting the apple, and storing them under the snow. The technique was born out of necessity, but it turns out that natural cooling and constant humidity increase amino acid levels, making carrots, apples, daikon, and other root vegetables sweeter, and fragrant. Their land is less.

 

Now producing more than they need, farmers market these Yukinoshita (under the snow) fruits and vegetables across Japan, providing extra income during another cold season.

Farming is a risky business fighting the weather, pest and monitoring the plants or fish, and paying for labor. In Canada and Germany, they harvest frozen grapes from Snow on vines and immediately make wine with them. It’s called Ice wine. And it’s supposed to taste very sweet and rich (I don’t drink so I am commenting on what I have read and heard). It’s a dessert wine.

And it’s very very hard to make since the labor should be very quick, before sunrise when the grapes ice thaws, making it impossible to make ice wine. You also need a very large labor force to pick them up in a matter of hours in total darkness save for a few lights. It’s why it’s so expensive and made in a few batches. Kudos to these folks who work hard in harsh environments!”
